Polish traditional liquors - recipe (Nalewka part II)

Nalewka can be made almost from everything. The most ordinary and general recipe is like this:

 

Ingredients:

- fruits or herbals

- spirit - alcohol from 75% up to 96% - it depend's on first component, because some herbals/fruits had to be flooded with stron alcohol and some with less powerfull one

- spices and additives (sugar, cinamon, honey, coffe, saffron, pepper, vanilia etc)

 

Proportions (most popular):

1 glass of fruits on 4 glasses of alcohol

 

Formula:

In one word - mix everything and let it mature in wooden or glass barrel.

And thats all. Of course this is the shortest formula and in most cases it will give a tincture which could be drink, but such tincture won't be good enough. Some of Polish tinctures reciepes, the families secrets, are much more complicated. Nalewka made from such recipe has that "something special thing" which every good nalewka should have. When You drink good nalewka, You can taste, feel and small a summer (when it's made from herbals), spring (when the ingridients are such like rose petals),autumn (when it's made from fruits) and even winter (when it's made from honey and spices).

 

 

We have for You one more nalewka recipe - this time more complicated - Polish Sliwowica. Nalewka made by this recipe is very popular one in Poland.

 

Ingredients:

2l of ripe Hungarians plums - without pit's and dried

1l of 96% spirit

0,75 l of pure vodka (40%)

3 full glasses of sugar

2 glasses of clean waterj

 

Formula:

Cut fruits in stripes and place in gander. Full gander with vodka and spirit.

Cover gander tigthly and put in cold place for 3 weeks. After this time, add syrup made from sugar and water. Stir everything lightly.

After another week, strain everything to get rid of remnants of the fruits and put once again in cold place for more than half a year.

That's all.

One more word. The fruit remnants are great as addition to the desserts, ice creams and cakes.
